Salmon Plank

  • 1 salmon filet, deboned and skinned
  • 1 cup chopped onion
  • 2 tbsps. Feiges Sunflower Oil
  • 3 large minced garlic cloves
  • 28 ounce stewed tomatoes
  • 3/4 cup black olives (in water)
  • 1/4 cup Feiges Oil and Vinegar
  • 1/3 cup feta cheese
  • salt and pepper to taste


Saute onions with Feiges Sunflower Oil on medium heat for about 10 minutes, add minced garlic. Stir in tomatoes, salt and pepper and continue cooking until the juice is evaporated and fairly dry. Add olives and Feiges Oil and Vinegar. Spread on top of cooked salmon and crumble feta over top. Sprinkle salt and pepper on salmon and place on foil lined cookie sheet. Bake at 350 for about 20 minutes.
